Strawberry Cornlets with Walnut and Jelly

Method of preparation :

The 150 g butter melts. Divide the resulting dough into 4 equal parts. Spread each part in the shape of a rectangle as thin as possible, grease with melted butter and sprinkle the entire surface with a little flour.

Roll into a roll and cut into 10 equal parts (we can even cut 12 pieces from a roll). Do the same with the remaining 3 pieces of dough. Let the pieces of dough cut, leaven for about 30 minutes. After they have fermented, we take each piece and spread it thin as in the picture.

Put the desired filling at one end and roll them, shape them into donuts and then place them in a tray lined with baking paper and bake them until lightly browned.
Allow to cool slightly cornuletele , then give through powdered sugar.

In a large bowl, mix the lard well with the powdered sugar. When you get a foam add eggs and sour cream. Mix everything very well then add the vinegar. Gradually add flour and baking powder until you get a fluffy dough that no longer sticks to your hands.

Place the dough in a bowl and cover with cling film. Leave it in the fridge for an hour.

Meanwhile, peel the walnuts and fry them a little in the hot oven until lightly browned. Let them cool and cut them as small as you can. Mix them with the plum jam.

Take the dough out of the fridge and spread it with a wire rod. Cut out circles with a glass and fill them with jam. Then roll the croissants and place them in the tray lined with crescent-shaped baking paper.

Bake the croissants for 20 minutes in the oven at 180oC.

Take them out on a plate and let them cool.

After incorporating the flour well, cover with cling film and refrigerate for half an hour (as long as they stay in the fridge, the yogurt is activated and will grow very nicely in the oven).

We take out the dough and divide it into 10 equal pieces, which we put on a straight support and put them in the fridge. We put them in the fridge and spread them one by one until we finish them. If we keep them at room temperature, soften the dough until they we finish everything to spread and it is harder to work with it. It is a very fragile dough and it is easier to work with.

After putting them in the fridge, prepare the tray with baking paper and turn on the oven, at 170 degrees, to heat it until we fill the first tray. Place the dough obtained on the work surface powdered with flour, spread it in a sheet of about 0 , 5 cm thick and cut it with a wheel or a knife into 8 triangles. Put walnuts and shit in the center of each triangle. Roll each triangle from the base to the top and place the croissants in the oven tray lined with baking paper.

Put them in the preheated oven at 170 degrees and leave them for 15-20 minutes.

It should look like in the picture below when they are ready. We take the donuts out of the oven and powder them with powdered sugar while they are hot. It is good to powder them warm with sugar, because the sugar sticks better to them.

We serve them hot or cold, they are good in both variants.


Fresh croissants with walnuts

  • 350 g flour
  • 150 g ground walnut kernels
  • 100 g butter 82% fat

  • 75 g old powder

We wrap it in a food foil and put it in the fridge for at least 2 hours or leave it overnight.
After this time, take the dough out of the fridge and break pieces of it (I weighed 15 g - I weighed them) and roll them into a string, then thin the ends a little and give them a crescent shape. No need to work with flour, the dough will not stick. Place the croissants in a tray that we will put in the preheated oven over medium heat - 180 & # 176C for 15-20 minutes. The croissants are ready when they lightly brown on the sole and the tips turn a slightly brown color. Let them cool a bit, then roll them in powdered sugar. The croissants can be kept longer (2-3 weeks) in closed boxes with lids. They are tender to melt in your mouth!

Fresh croissants with butter and cream, filled with walnuts and jam
